Processing Information
This natural Pacamara was processed using an extended maceration, designed to increase complexity while maintaining elegance. After harvest, whole cherries were sealed for 28 hours of maceration, allowing controlled fermentation to develop sweetness and layered fruit character.
Drying then took place very slowly in a solar dryer for around 45 days, supported by dehumidification to carefully manage moisture reduction. This prolonged, controlled drying helps stabilise the coffee and preserve delicate aromatics. The result is a refined and structured cup, showing soft yet vibrant fruit notes of strawberry and mandarin, layered with honeyed sweetness and gentle florals, delivering a delicate, fruit tea-like profile with remarkable clarity.
Producer Information
Mil Cumbres is a boutique coffee farm located near Volcán in Chiriquí, Panama, on the western slopes of the Barú volcano between 1,600 and 2,000 metres above sea level. The farm was established on former cattle pasture and today spans roughly 60 hectares, with about 25 hectares planted with coffee and the remainder preserved as native forest within the Barú Volcano National Park.
The project is led by Mario Fonseca, a first-generation producer and former lawyer who entered specialty coffee with the goal of producing competition-level coffees. Supported by mentorship from renowned producer Ratibor Hartmann, Mil Cumbres has quickly gained recognition, with its coffees placing highly at Best of Panama, including an incredible 2nd place in the Varietals category for their Pacamara in 2024.
Pacamara is a hybrid of Pacas and Maragogype and is known for its large beans and expressive cup character. It thrives in the farm’s cool, high-elevation microclimate, producing coffees that combine fruity notes with remarkable elegance.
