Processing Information

This washed Gesha from Black Moon Farm (Lot 4) highlights the clarity and elegance the variety can achieve when grown at high elevation and processed with precision. Carefully harvested ripe cherries were pulped and washed to remove the mucilage before drying slowly under controlled conditions, preserving the delicate aromatics and structure of the coffee.

When brewed, the coffee opens with an intensely perfumy floral aroma, reminiscent of honeysuckle and fresh blossoms. In the cup it shows a refined balance of lively raspberry and lime notes, supported by a creamy, magnolia-like texture. As it cools, the flavours become sweeter and more layered, revealing pear, grape and white sugar notes, finishing with lingering floral Earl Grey, fresh kiwi notes.

Producer Background

Black Moon Farm is located in Alto Quiel, Boquete, Chiriquí, between 1,700 and 1,780 metres above sea level. The farm is owned by Hunter Tedman, a Q-Grader and current President of the SCA Panama who established the project with a strong focus on regenerative agriculture and soil restoration. Previously degraded vegetable farmland has been transformed into a biodiverse coffee ecosystem, with thousands of shade trees planted to rebuild soil fertility, support pollinators and encourage a healthy microbial environment.

Despite being a relatively young farm, Black Moon has quickly gained international recognition. In 2024 the farm won 1st place in the Best of Panama Varietals category with its Constellation Chiroso lot scoring 94.1, the highest recorded score for a non-Gesha varietal. Earlier, coffees from the farm’s first harvest already achieved 92.5 and 93.5 points at the 2022 Best of Panama competition.
