Processing Information
This washed Gesha from Las Brujas (Lot 3645-T2) follows a precise, multi-stage process designed to enhance clarity and structure. After harvest, cherries rested for one day to oxidize, before being depulped and placed in sealed sacks within a cold-air environment at 17°C for 17 hours, allowing a controlled, low-temperature fermentation. Following washing, the coffee was pre-dried on African beds for 6 days in a controlled laboratory setting with dehumidifiers and airflow, before a second resting phase and final drying in a static dryer at 35°C. The result is a classic floral-forward expression of the variety, showing jasmine, lemongrass and raspberry when hot, evolving into orange, toffee and herbal notes, and opening up into sweet stone fruit notes like white peach and honey when cold; remaining structured, with a tea-like elegance.
Producer Background
Kotowa Coffee is one of Panama’s most established and respected producers, with roots dating back to 1918, when the farm was founded by the MacIntyre family. Today, it is led by Ricardo Koyner and his daughter Victoria, a third and fourth-generation producer known for combining tradition with modern precision processing.
Las Brujas is one of Kotowa’s highest and most exclusive plots, located in the Boquete highlands on the slopes of Volcán Barú, with fertile volcanic soils and a shading forest canopy keeping temperatures cool and creating ideal conditions to grow Gesha. The farm is managed with a strong focus on regenerative agriculture, preserving native forest and biodiversity.
Kotowa coffees have consistently performed at the Best of Panama, including multiple top-10 finishes in the Geisha Washed and Natural categories, with standout placements such as 2nd place in Geisha Washed (2019), and are widely recognised for their balance, clarity, and classic Panamanian Gesha profile.
