Processing Information

This competition-level natural Gesha was produced using a tightly controlled anaerobic fermentation designed to maximise fruit intensity, but retain clarity.

Cherries were harvested at peak ripeness and sealed in a closed tank for 48 hours, allowing sugars and organic acids to break down slowly in an oxygen-restricted environment. After fermentation, the coffee underwent a short period of direct sun pre-drying to lower moisture content rapidly and stop the fermentation, before being transferred to a climate-controlled dark room. There, drying progressed slowly and evenly under carefully managed temperature and humidity.

The result is a vibrant yet clean profile, showing bright red fruit acidity, like blackcurrant, cherry and pomegranate - balanced by jammy sweetness and refined structure that holds the cup together as it cools.

Producer Background

Chevas Coffee Estate in Boquete, Panama, is led by José Luis Chevas, who founded the estate in 2016 at just 18 years old, building on the agricultural legacy started by his grandfather Luis Victor Chevas in the 1970s.

The family farms across Alto Chiquero, El Salto, and Alto Quiel, which are located between 1,500 and 1,750 metres above sea level, where varied microclimates provide ideal conditions for high-quality Gesha and other exotic varieties.

José Luis works closely with Adrián Villarreal, the 2020 Panama Barista Champion, combining producer and barista perspectives to develop distinctive competition coffees. Their work has already gained international recognition, with Chevas placing 9th in the Geisha Natural category at the 2024 Best of Panama, marking the estate as an exciting rising name in Panamanian specialty coffee.
