Processing Information
This Gesha lot underwent a double-phase submerged anaerobic natural process, designed to build complexity while maintaining clarity and elegance. Cherries were handpicked at peak ripeness, sorted, and floated before an initial 144-hour pre-drying phase on raised beds.
They were then sealed in GrainPro bags and submerged in spring water for 244 hours of anaerobic fermentation, allowing controlled development of sugars and acids. After fermentation, the cherries returned to raised beds for 25 days of slow sun drying.
The result is a clean yet expressive cup, showing stone fruit and ripe berry notes when hot, evolving into more vibrant pink grapefruit, raspberry, and sweet lemonade when warm, to cranberry and rhubarb notes as the coffee cools. This coffee is bright, layered, and clean without any obvious fermentation character.
Producer Background
Abu Coffee is owned and led by José and Bibiana Luttrell and in Cañas Verdes, Boquete, on the southern slopes of Volcán Barú at around 1,600 masl. The volcanic soils, high rainfall, and the region’s signature bajareque mist create ideal conditions for Gesha cultivation. The farm, Hacienda Cañas Verdes, is shaded by native forest and managed as a balanced ecosystem that supports biodiversity and slow cherry maturation.
The project was founded in honour of José Guillermo Luttrell Tedman, a third-generation producer whose vision was to produce a perfectly balanced Gesha. Despite being a relatively young enterprise, Abu Coffee has quickly established itself among Panama’s top producers, placing 6th at Best of Panama in 2017 on its debut and consistently achieving high scores and auction placements since.
