Processing Information

This natural Wush Wush from Las Brujas (Lot 3569) follows a controlled, staged drying process designed to build fruit complexity while preserving clarity and balance. After harvest, cherries rested overnight before being transferred to African beds in a greenhouse, where they were dried in a 10 cm layer for 6 days, with regular turning to ensure even moisture reduction.

Following pre-drying, the coffee was rested in sacks for an additional 5 days, creating a slow and low intensity fermentation, increasing complexity, before completing drying in a static dryer at 35°C, allowing for precise moisture control and consistency.

The cup is expressive and clean, opening with lilac, lychee, guava and strawberry, moving into a creamy, strawberries-and-cream profile when hot. As it cools, it becomes brighter and more vibrant, showing raspberry, kiwi and honey, before developing into tropical sweetness, akin to apricot, mango and soft stone fruit.

Producer Background

Kotowa Coffee, led by Ricardo Koyner and his daughter Victoria, is one of Panama’s most established producers, with a history dating back to 1918. Their farm Las Brujas, located high in the Boquete region on the slopes of Volcán Barú, is their most elevated plot at around 1,900 masl, known for producing refined and expressive microlots. Volcanic soils, cool temperatures, and forest shade create ideal conditions for slow cherry maturation and high cup quality.

This lot features Wush Wush, a rare Ethiopian landrace variety prized for its floral intensity and tropical fruit profile, often compared to Gesha but with a slightly fuller, more fruit-driven character. Kotowa coffees have consistently achieved top-10 placements at Best of Panama, including standout finishes in Geisha categories, reinforcing their reputation for precision processing, as well as classic Panamanian profiles.
