Processing Information

This natural Gesha from El Oasis follows a carefully controlled process designed to develop fruit complexity while preserving the variety’s delicate aromatics. Only ripe cherries are selectively hand-harvested, with careful selection helping ensure uniformity before processing begins.

The whole cherries first undergo 24 hours of controlled oxidation, followed by a further 12 hours of anaerobic fermentation in sealed containers. These two stages create distinct phases in the process: an initial period of oxidation before oxygen exposure is restricted for fermentation. After fermentation, the cherries are sun-dried under controlled conditions, with even moisture reduction helping preserve the coffee’s aromatic character and support stability during storage.

The resulting cup brings together the variety’s floral elegance and a more fruit-driven expression, with orange blossom, raspberry and plum offering a balance of delicate florals, bright berry character and rounded stone-fruit sweetness.

Producer Background

El Oasis is a small, specialised coffee farm in the village of Bella Vista, in Ortega, Tolima, Colombia, at approximately 2,150 metres above sea level. Founded by chefs Fernando Bocanegra and Pedro Lugo, the farm grew from a culinary ambition into a project dedicated to exploring the potential of specialty coffee. Their background in food and flavour informs an approach built around careful selection, precision and an interest in how individual characteristics can be developed through processing.

The farm grows exclusively Gesha, with a strong emphasis on preserving the variety’s genetic integrity and expressing its distinctive qualities through cultivation and post-harvest experimentation. Working with Cata Export, Fernando and Pedro have developed coffees that have attracted attention beyond Colombia. In 2025, this coffee was used to win the German Barista Championship, bringing further recognition to the farm and its work. This lot offers another perspective on their approach: a naturally processed Gesha that balances delicate florals with vivid fruit character.
